We're going to a party this weekend & I need ideas. This group is not very adventurous. All I can think of is salsa and baked chips or veggies and dip. I thought about hummus but that wouldn't fly.
Re: healthy appetizer ideas?
I'm not going to call it healthy, but it can be made low fat.... I make buffalo chicken dip with FF ranch, FF cream cheese and the 2% mil shreddded cheese. Other than that the hot sauce and the chicken aren't bad for you.
Another variation of that dip I have made is just a can of chicken, a block of FF cream cheese and a bunch of diced jalapenos (quantity would be based on how hot you want it)
Both can be served with Celery / baked tostitos/ wheat Triscuits etc...
I brought this Pumpkin Fluff Dip to my family Thanksgiving and it was a hit. Served with graham crackers and granny apple slices.

What about veggie pizza?
Two pkg of low fat cresent rolls spread out on bottom of pan. Mix one package of Hidden Valley dip and seasoning mix powder with low fat sour cream. put spread on top of backed crescant rolls. Then sprinkle some cheese, carrots, tomatoes, broccoli, cauliflower, peppers etc. on top. It might not be too healthy with the sour cream and rolls, but it's good and you're still getting your veggies
If this doesn't make sense... just let me know and I'll send the recipe

I have learned that people that are closed off to new food just need a little nudge. They need to try familiar flavors in a new way. I threw a dinner party back in may where I was told not to be upset if such and such didn't eat this. Don't be upset but they were all going to be drinking miller light. By the end of the meal i had them all drinking wine and port and all courses were had by all.
try cooking light. they have some good stuff. here is one that looks good. Pretty tried and true.

Seasoned black beans, yellow cuban rice, and cheese rolled up in egg roll wraps and fried or baked. Serve with greek yogurt on the side (can be subbed for sour cream) and some salsa. You can mix some jalapenos in to add spice.
