It's a sit-down dinner...not sure what to add for sides?

Your menu is all over the place.
You've got Mexican, Italian, French, American, none of it flows.
Start with your entree. If you want the salad, pasta and chicken, then I would get rid of the ham. If the ham is really what you want to serve, I would come up with other sides, like macaroni and cheese, satueed green beans, something more along those lines.
Your appetizers would benefit from something more cohesive. Personally, chips and salsa and the mojitos seem really out of place for Christmas. Even the fruit salad, to be honest. Christmas is a great time to pick heartier fruits and vegetables that have more complex flavors and aren't as bright as your summer flavors. Maybe instead of the fruit salad, you could do a warm fruit compote and serve it with vanilla ice cream. Instead of the mojitos, maybe do a mulled cider or eggnog.
