Chocolate eclair pie? How have I never heard of this? How do I make this amazing sounding confection?

Re: **2Brides**

  • It is ridiculously easy.

    1 box graham crackers
1 tub Cool Whip (I used lowfat)
1 package instant Vanilla Pudding (can sugar-free)
    1 tub of chocolate frosting

-Make pudding according to directions and then mix in the tub of Cool Whip.
-Line whole graham crackers on the bottom of a 13x9 inch pan (or something smaller if you'd like)
-Place a layer of the pudding mixture on top of the graham crackers and continue to layer to the top of the pan (you'll probably end up with 3 layers of crackers and 2 of the pudding mixture.)
-Place the tub of frosting in the microwave for 30-45 seconds (after removing top and foil)
-Pour chocolate frosting on top of the last layer of graham crackers and spread.
-Cover and place in refrigerator over night and enjoy! It tastes exactly like a chocolate eclair the next day.

So good and so easy. Perfect for a potluck!

  • Thank you! That sounds really good :-)
  • oh it does sound good.  I think anything with pudding and cool whip is going in a good direction though.  I might have to whip this up some time!
