I'm throwing a cocktail party next Saturday for 18 people.
I am going to be away for a few days so I have very little time to prepare. So I need things that will be easy and relatively quick to make.
Here is what is on the menu so far:
Hors d'oeuvres
Cheese and cracker platter
Shrimp cocktail
Bruschetta
Melon wrapped in prosciutto
Swedish meatballs (does anyone have a good crockpot recipe for this?)
Rosemary chicken skewers
Stuffed mushrooms
Desserts:
Cream puffs
Mini cheesecakes
Italian cookies
I feel like I need two more appetizers, but I'm not sure what to make. My friends are fairly picky eaters so anything too "fancy" would not appeal to them.
Any help is appreciated.

How about the little cocktail weenies in the chili sauce/grape jelly sauce?You could also do homemade chicken nuggets and some fun dipping sauces.

Swedish Meatballs:
Ingredients:
(1) Beaten Egg
(1) 10.5 Can of Condensed French Onion Soup
(2) Cups (1 Box) of Stove Top Stuffing Mix
(2) Pounds of Ground Beef
(1) 15 Ounce Can of Tomato Sauce
1/3 Cup of Brown Sugar (packed)
2 Tablespoons of Worcestire sauce
2 Tablespoons of Apple Cider Vinegar
In a large bowl combine egg, soup and stuffing mix. Add ground beef. Mix well. Shape into (50) 1" balls. Place meatballs on a baking pan. Bake in a 350 degree oven for 15 to 18 minutes or until no longer pink. (meat thermometer reads 160). Drain off fat and transfer to a 3 1/2 to 5 quart slow cooker.
In a bowl combine the remaining ingredients. Pour over meatballs, stir gently to coat.
Cover, cook on high heat setting for 2 hours. Serve immediately or keep warm on low-heat setting.
(I have made the meatballs ahead and frozen them - take out a day or two in advance to thaw in the refrigerator - then pop in slow cooker and add sauce day of party).
