Our tech team has launched updates to The Nest today. Food help

I need to bounce some ideas off you guys.  I have to make food for the following occassions coming up and of course when you sit down to think about something, your brain goes COMPLETELY empty. LOL

Occassions:

--Christmas Eve (just Greg and I, but it'd be nice to have something fun or special, but we both have to work and it's likely to be a little chaotic, so will also need to be fairly easy/quick.)

--Christmas Day @ ILs.  No idea what MIL is making, but I'm allowed to bring something.  Typically we are asked to bring Creamy Grape Salad, but I'm wondering what else I could take... Tongue Tied

--My family's Christmas, Sunday, Dec 27.  It's kind of a "bring a dish to pass" thing with no rhyme or reason (which drives me crazy!)  It's also ~1 hour 15 minute drive for us; I want to do something cool to impress a little (which leads me to think desserts) but at the same time, do not want EVERYONE to bring something dessert and us eat nothing but sugar all day. Ick!

--New Year's Eve @ ILs.  They throw this HUGE party in their basement (done up as a bar) and I'm in charge of desserts.  I was thinking of trying to make some champagne cupcakes (which I'll need a test run of beforehand) and maybe those mint brownie cupcakes made in miniature form.  Any other suggestions/thoughts?

--Food for a friend who's ready to go into labor anytime after Christmas.  I've got a few recipes I'm thinking would work (might make a Shepherd's pie, stuffed shells or enchiladas), but am open to others that I can freeze.  I got a great suggestion to use loaf pans so they're smaller - all they have is the one refrigerator freezer in their kitchen, so I need to find a dish/soup I can freeze in a bag flat for space reasons.
