The baptism is at 12:30 and the party 2-4 so people going to both will need a substantial meal I think, but I am trying not to make it overkill for the sake of budget & time. For about 30 adults and 7 kids ( all under 6 ) :
meatballs & sauce ( w/rolls for sandwhiches )
baked ziti
caesar salad
sub tray ( assorted varieties )
veggie tray
chips/dip
cake
sherbert punch & soda to drink
DH really wants boneless buffalo bites too but those are soo darn pricey, should I splurge and add them or do I have enough food ?

Not sure, if this works out more budget-friendly, but I think it might be easier...
Swapping out Meatballs & Ziti for frozen lasagnas?
And to make it all "match" a little bit more, how about swapping out chips and dips for cheese and crackers? (maybe even a simple bruchetta)
I agree with PP on getting rid of sub tray and getting lemonade and tea instead of punch and soda... easier AND cheaper.

This is what I would do:
Cheese and crackers
Baked ziti
Meatballs and sauce
Rolls
Salad
Deli tray (coldcuts, cheese, olives or pickles)
Cake
I don't think you need much for appetizers. I think the focus will be on the meal and pasta is very filling.
I don't think you need a full sub tray either, a simple deli tray will be sufficient.
