I have a few attemtps at making "Split Second Cookies" (from the Taste of Home Baking Book) and the recipe states to make a 1/2" depression down the middle of the cookie.
I do this, the cookie rises to just about flush with the sides, and the middle is very, very soft that it is impossible to pick up the cookie without it falling apart in the middle.
Any tricks to get the middle strong enough to not break?
Re: Cookie Issue
are you baking it long enough? Is it browned fully?
are you letting it cool completely before removing it from the pan?
if both of those aren't fixing it, try turning your oven down about 25-50 degrees and letting them bake for longer. They will "dry out" a bit more that way.
Hope that helps! Good luck!
Yeah I would suggest pulling it out immediately when done or even a minute before hand and letting it cool for 5 minutes on the pan before putting it on a cooling rack. This should help the middle hold together.
If that doesn't work, you could always try making the indent only 1/4 of the way through the cookie so it's more firm after baking. Good Luck!!
