Roanoke Ladies
My mom is turning 60 in January. For her b-day, my sister and I are planning to meet up in Roanoke and have a girls weekend. We want to spend the day (or at least 1/2 day) at a spa, get some dinner, go shopping and stay at a decent hotel for the night.

I agree w/ the Fork in the Alley and City recommendations. Blue 5 has good food as well (downtown) and if you don't want anything extravagant, Alejandros has *great* mexican (also downtown).
For a Hotel, you could stay at Hotel Roanoke and then have good access downtown for dinner.
For Spas, I would maybe try Les Cheveux http://lescheveuxsaloninc.com/ or The Best Little Hairhouse http://www.besthairhouseandspa.com/index.htm
There's some shopping downtown and then of coure at Valley View. The Taubman museum recently opened up downtown and I've heard a lot of positive feedback from people who have gone.
