Breakfast Casserole...Help Please!

Hi ladies...looking for a recipe for a breakfast casserole to use this week.  If you have a good one and would be willing to share, I would greatly appreciate it! 

 Also, any other recipes for a Christmas brunch would be wonderful!  Thanks!

  • I am making a spinach & mushroom frittata for Christmas breakfast.

    1 package of chopped frozen spianch (thawed, rinsed and squeezed)

    1 package of fresh mushrooms, chopped roughly

    5-6 eggs, beaten with a little milk

    half a finely chopped small onion

    cheese or your choice (I am using a parm/asiago/mozzarella mixture)

    saute the onion & mushrooom with a little bit of OO, S&P.  mix in the spinach.  layer with the cheese and pour over the egg mixture.  bake at 350 for about 40 minutes, sprinkle more cheese on top and bake for anothe r5 minutes.

  • This is the one I use.  I add also add baby spinach, bell pepper, and chopped onion.  It so easy to prepare the night before and just pop in the oven.

    1 can crescent rolls

    1 pound sausage--cooked and drained

    Fresh mushrooms --- sliced

    3/4 pound Monterey Jack cheese--grated

    6 eggs--- beaten

    1 can cream of mushroom/onion/leek soup.

    Preparation:

    Line a 13X9 inch Pyrex dish with rolls, sealing perforations. Cover with sausage, mushrooms and half the cheese. Mix eggs with soup and pour over casserole. Sprinkle remaining cheese on top. Chill overnight. Bake at 350 for 1 hour....Note: for variation, you can use cooked, crumbled bacon or bit-sized pieces of ham instead of sausage.

  • This is what I make for christmas.  It is a sausage brunch casserole that used crescent rolls instead of potatoes.

  • I do a baked French Toast that rocks.
  • Sunday Brunch Casserole

     

    ?- lb sliced bacon                                                                  

    ?-c chopped onion

    ?-c chopped green pepper                                                      

    12- eggs

    1-c milk                                                                                  

    1-c shredded cheddar cheese

    1-pkg hash brown potatoes, thawed                                         

    1-tsp salt                                                                                              ?-tsp pepper

    ?-tsp dill weed

     

    In a skillet, cook bacon until crisp.  Remove with a slotted spoon, crumble and set aside.  In the drippings, saut? onion and green pepper until tender, remove with a slotted spoon and set aside.  Beat eggs and milk in a large bowel.  Stir in has browns, cheese, salt, pepper, dill, onion, green pepper and bacon.  Transfer to a greased 13 X 9 X 2inch baking dish.  Bake, uncovered at 350 35-45 minutes or until a knife inserted near the center comes out clean

  • There are a few Southern Living recipes that are really good; just go to their website, click on the "Food" tab, and search "breakfast casserole" under "Recipes."

    One of their main articles on the Food page right now is "Host a Holiday Brunch" and there are three or four breakfast casseroles in that collection of recipes.

  • This was from Ina Garten's column in House Beautiful.  I haven't made it, but it looks delicious.  I will be making it on Christmas. 

    PS: When I was looking up the recipe, I saw a blog called TheGoods where the blogger made it, posted pics, and said it was delicious.  She used whole milk.

    French Toast Bread Pudding
    Serves 8

    • 1 challah bread, sliced 3/4-inch thick
    • 8 extra large eggs
    • 5 cups half and half or milk 
    • 3 tablespoons honey
    • 1 tablespoon freshly grated orange zest
    • 1 teaspoon pure vanilla extract
    • 1/4 teaspoon kosher salt
    • Confectioner's sugar and pure maple syrup for serving

    1. Preheat the oven to 350 degrees
    2. Place the bread in two layers in a 9 x 13 x 2 square or oval baking dish, cutting to fit the dish, and set aside.
    3. In a large mixing bowl, whisk together the eggs, milk, honey, orange zest, vanilla and salt. Pour the mixture over the bread and press the bread down to soak completely.
    4. Place the baking dish in a larger roasting pan. Add very hot tap water to come an inch up the side of the baking dish. Cover the roasting pan tightly with aluminum foil, tenting it so the foil doesn't touch the pudding. Make two slashes in the foil to allow steam to escape. Bake for 34 minutes, remove the aluminum foil, and bake for another 40 to 45 minutes, until the pudding puffs up and the custard is set. Remove from the oven and cool slightly.
    5. Using a small sieve, sprinkle with confectioners' sugar and serve in squares with maple syrup for drizzling.

    I've done the hashbrown casserole and the mini quiches- both were very good!  And simple.

  • This is what we are having, its always a huge hit.

    Hash Brown, Ham and Cheese Bake

    3 cups frozen hash brown shreds, thawed
    ? cup butter, melted
    1 cup shredded Cheddar cheese
    1 cup ham diced, I just use the Hormel packaged diced ham
    ? cup finely diced red pepper (optional)
    ? cup milk
    4 eggs

    1. Preheat oven to 425?F. Press potatoes in bottom of 9? pie pan. Drizzle butter evenly over potatoes. Bake for 25 min.
    2. Place cheese, ham and peppers over hash brown crust. Whisk together milk and eggs and pour over ham mixture.
    3. Reduce heat to 350?F and bake for an additional 25 min

     Sausage Egg Bake

    6 Slices Bread, 8 Eggs, 1 Cup Milk, 1 Package Roll Sausage (Browned and Drained), Salt and Pepper to Taste, Shredded Cheese.

     Place bread in bottom of grease 9X13 baking dish.  Place sausage on to of bread.  Mix eggs, milk, and salt and pepper and pour on to of sausage.  Top with cheese.  Chill over night.

    Bake at 350 for approx. 1 hour or until set.

     ENJOY!

     

  • Blueberry Stuffed French Toast (recipe can easily be halved)

     12 slices of thick bread (Texas Toast)

     2- 8 ounce packages of cream cheese

     1 cup of fresh or frozen blueberries

     10 eggs

     1/3 cup maple syrup

     2 cups milk

     

    Remove the crusts from the bread and cube. Spray the bottom of a 9x13" glass baking dish with vegetable spray and place half the cubes of bread in the pan. Cube the cream cheese and put on top of the bread. Distribute one cup of fresh or frozen blueberries over the cream cheese. Place remaining bread over the blueberries.

    Beat the eggs, add the maple syrup and the milk. Pour mixture over bread and cheese. Place plastic wrap over dish and refrigerate overnight.

    Bake the "French toast," covered with foil, in the middle of a preheated 350F. degree oven for 30 minutes, remove the foil, and bake the French toast for 30 minutes more, or until it is puffed and golden.

     

    The Sauce:

    1 cup water

     1 cup sugar

     2 tablespoons corn starch

     2 cups fresh or frozen blueberries (added to the recipe one cup at a time--see instructions)

     1 tablespoon butter

     

    Cook the water, corn starch, sugar, and 1 cup blueberries until it thickens. Then, add one more cup of blueberries and the butter. Pour over individual pieces, slice and twist a lemon slice over the top for garnish, and serve. (Note, it is best if you let the Blueberry Stuffed French Toast sit for about 10 minutes before slicing). You can substitute raspberries for the blueberries or use a combination.

     

    Serve the French toast with the sauce.

     

  • the recipe someone posted for the sausage egg bake sounds very similar to my mother-in-law's sausage strata.  she's going to bring that to my house but substituting the sausage for veggies.  my mom's bringing sticky buns, sis-in-law is bringing fruit salad.  hubby and i are providing juice, coffee, mimosas and bacon.  can't wait!

  • We make the sliced bread casserole from a few posts up, but we also do grits casserole sometimes.  It's pretty good stuff.  It's actually the recipe on the red box of breakfast grits found in the cereal aisle usually.  If memory serves, it's similar to this one:
