I'm in charge of "salad"

So, last year, for Xmas Eve dinner at my uncle's, I brought the salad bar... greens, grape tomatoes, cucumbers, shredded cheese and croutons.

This year, I'd like to bring it up a notch.  Maybe include nuts and dried fruit.  I'd like to stay way from any dairy b/c of my niece's severe allergies.  Any suggestions?

  • I am always a fan of this salad: romaine lettuce, chopped up onions, walnuts, dried cranberries, if they have them I also like halved strawberries, and a balsamic vinaigrette. You could dice up some pepper jack cheese or offer feta cheese crumbles on the side, so if people want them they can have it.
  • romaine with sectioned oranges, super thinly sliced red onions, and pomegranite seeds are yummy with a balsamic dressing.

    Keeping with pomegranates, I had a salad with very thinly sliced green apples, pomegranate seeds and romaine lettuce with poppy seed dressing. It was delicious!

    This one is so good, doesn't have any dairy and has lots and lots of color.

  • What about: lettuce (romaine, bibb, a mix, basically), spinach, tomatoes, shredded carrots, crisp pink lady apples (chopped), dried cranberries, candied walnuts, and honey dijon? That would be dairy free (though, if you wanted to keep some cheese separately for cheese lovers you could keep bleu and goat)

  • Thanks ladies!  These sound great.  Unfortunately, after a quick, informal, survey of Xmas Eve guests, I've found out that they want the same 'ol.

    But I will definitely use these in the future for myself.  They sound delicios!

  • I make a spinach salad that is awesome.

    Baby spinach, dried cranberries, toasted pinenuts and gorgonzola cheese. You could have a dish of cheese on the side.. and sometimes I use mozzerella for those who dont do a blue cheese.

    I serve with a balsalmic vinegrette!
