last minute plans..sit down at our home
Due to the snow storm about to roll in we are here cooking for 6 guests in town. I'm SO not a cook or a big dinner planner and i want to hurry up and come up with a great dinner menu. Hubby got a ham from work and figured would make this ham...only thing i can think of is potatoes and green beans to make with it...yeah ...boring? Can anyone offer me some last minute advice with side dish ideas? If I had fresh green beans, should i have a salad too? what kind a salad? no potatoes? something in place of potatoes...augh! No pressure on me here!!! lol
Re: last minute plans..sit down at our home
Relax. Almost everything would go with the ham. A salad would be good, even if you're doing green beans. I would do something seasonal, like this salad and toss in some walnuts and dried cranberries.
As far as a starch, you could do sweet potatoes and some yeast rolls and call it a day.
Very easy and good casserole my mother makes at holidays;
2 packages chopped frozen spinach, thawed (I drain it well, she does not)
3 cups shredded cheddar
1 egg, beaten
1 cup mayo
1 can golden mushroom soup
Mix together, pour into casserole dish, bake at 350 until bubbly and browned on top. I made it for a work dinner and it was totally cleaned out.
