Here are some meals I've done lately:
This is a WW Shepard Pie recipe, this is the meat and veggies
Top it off with some home made mashed potato (or the instant is fine too)
Finished product I topped it with some fat free mozerella cheese. This is no doubt one of the best meals I've ever made! It was sooo good.
This is my chicken with mango salsa. The recipe is inspired by one I found on allrecipes.com and WW. The chicken I marinated with with lime and chili powder and grilled it on the forman. The salsa I cut up the mango (got some from Miami from Manny's aunt), some onions, and orange peppers, added paprika, chilli powder, some red pepper flakes, a little garlic and ground pepper. It was great!
This is my take on the potato recipe that was posted. I didn't have red potato so I used baking ones and they were HUGE. I have no idea if this is what they're supposed to look like. I used a little salt and pepper with garlic. Topped with cheese and baked.
Finished product with some fat free sour cream.

These are my Boston Cream Cupcakes that I made for Manny yesterday. This is a Sandra Lee recipe. I topped my cupcake with white chocolate and it was pretty tasty.
This is our dinner for today, Asian Beef Stir Fry. The recipe is from allrecipe.com and we're having it with brown rice. Let you know how it came up.

Everything looks delicious! Even the Shepard's Pie - I DON'T EVEN LIKE SHEPARD'S PIE! I made Arroz con Pollo yesterday and it turned out super yum for my first time!

Mmm... Looking at your post is making me hungry. Those cupcakes look amazing. Where'd you find the recipe? I've been dying to make cupcakes since the cupcake post and I haven't.

The recipe is super simple. Bake cupcakes with the yellow cake mix. Once they're out let them cool. Make instant pudding and put it in a pastry bag, pierce the cupcake and put a couple tablespoons of the pudding in each cupcake. Then melt some chocolate with a little heavy cream and dunk the cupcakes in it. :-) Done. (I put too much heavy cream in mine so that's why it dripped..lol)
Ingredients for the mash potato topping:
1 1/2 pounds of baking potatoes peeled and cut into 1 inch pieces.
1 1/2 pounds of parsnips " " (I didn't use this)
1/2 cup fat-free milk
1 tablespoon unsalted butter
Salt to taste
Pepper to taste
-Boil potatoes and parsnip if you use it until its fork tender. Add milk, butter, salt and pepper and mash until smooth.
Ingredients for filling:
1 pound of lamb (I used ground turkey...no wait I used ground beef [lean])
1 onion chopped
3 garlic cloves, minced
1 (10 ounce) package of frozen peas and carrots
3/4 cup reduced-sodium beef broth
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Cook meaton a skillet until browned and transfer to a bowl/plate. Add the onion and garlic on the same skillet until onions begin to soften add the peas and carrots until thawed about 2-3 minutes. Put the meat back in and mix with veggies. Stir in broth, mustard and Worcestershire sauce and salt and pepper to taste, bring to a boil and cook for another 1-2 minutes for sauce to thicken.
Transfer the mixture to a baking pan. Spread the potato mixture over the meat and Bake until potato topping is crisp and the filling is bubbling around the edges 25-30 minutes (350 Degrees) I topped mine with cheese!
Its really yummy.
Oh man, you've been busy!! You should start a food blog!! So what rolls did you find for the cheddar cups? Those are one of Mike's favorites! I might try those Boston Creme Cupcakes, Mike loves Boston creme!
I was thinking about doing a blog but I'm a follow the recipe kind of cook. I rarely have "that touch" to add to a recipe (like you..lol) so I don't think I can bring much to the table.
Manny loves Boston Cream too!! He loved the cupcakes! We sub some ingredients with fat free stuff so I can imagine the fat full stuff makes them even more amazing!!
I used the Chicago hard rolls but I couldn't find wheat :-(

I think that having a blog has forced me to be a better cook. It wasn't until I started mine that I started to get more creative. If you look back at the first several months you can see how far I've come!
I think those cheddar cups make great "guy food" - no silverware!

I'm preparing dinner for tomorrow (just turn on the crock pot and go) Beer BBQ Chicken another Sandra Lee recipe and it smells sooooo great! Manny would love that...maybe Mike will too?
