Does anyone have any good vegetarian recipes?

We've been trying to eat less meat, but since DH doesn't eat pasta, that makes it hard for me to think of creative meat-free meals.  Pasta was always my go-to dish!!  Sigh.  We both really like beans, so any bean recipes would be especially helpful!  I have a few good ones, but I'm looking to expand my vegetarian recipe collection!

  • well, this isn't really a recipe, but it's super quick if you're pressed for time.  Heat up a can of vegetarian chili (surprisingly hard to find in Walmart, I got Amy's organic brand) and serve over brown rice.  I bring it for lunch...and to make it even easier, I got the individual portions of precooked brown rice (1/2 cup each).  Good luck!

  • I love veggie quesadillas. My favorite way to make them is with orange and red bell peppers, onions, and yummmm mexican cheese. It's super quick and easy and very yum.

    I also enjoy enchiladas with lots of veggies instead of chicken.

  • Mmm....Indian food!  I didn't even think of that!  I wonder if Indian food calls for a lot of weird ingredients.  When I lived in Gainesville I would often eat the "karma-free" vegetarian meal the Hare Krishnas served on campus.  So good!!  I'll have to look for some recipes!

  • ok, I discovered this salad this summer.  It is my absolute favorite salad now.  A must try:

    1 box flavored couscous (garlic or Parmesan), cooked
    1 can chick peas
    1 red bell pepper, finely chopped
    1/2 Vidalia onion, chopped
    1 English cucumber, peeled, seeded, and finely chopped
    1 tomato, chopped
    1/4 cup fresh parsley leaves, chopped
    1/2 cup crumbled feta cheese
    Salt and freshly ground black pepper
    1/4 cup olive oil
    2 to 3 limes, juiced

     

    In a large bowl, toss all the ingredients with the olive oil and lime juice, to taste.

    Another yummy one, and this is by your fav. gal Ms. Ray :

    Nacho Pizza: 

    1 loaf baguette or semolina bread, day old is fine
    1 tablespoon extra-virgin olive oil, 1 turn of the pan
    2 cloves garlic, chopped
    1 jalapeno, seeded and chopped or 1 pickled hot pepper of any kind, chopped
    1 (15-ounce) can black beans
    2 teaspoons hot sauce
    1 1/2 teaspoons chili powder
    1 1/2 teaspoons ground cumin
    Salt and pepper
    1 cup prepared salsa, any variety
    2 cups shredded Cheddar, smoked Cheddar, Monterey Jack or pepper Jack
    1 heart romaine or 1/2 iceberg head, shredded
    1/2 cup green olives with or without pimiento, chopped (I skip this topping)
    1/4 red onion or 2 to 3 scallions, chopped
    2 plum or vine tomatoes, seeded and diced

     

    Split bread lengthwise. Hollow the bread out and cut each half in half across, making 4 boats.

    Preheat oven to 350 degrees F.

    Heat a small nonstick skillet over medium heat. Add oil, 1 turn of the pan, garlic and hot peppers. Drain beans. Add half of the beans then mash the remainder of the beans in the can using a fork. Add mashed beans to the pan and combine with whole beans. Season beans with hot sauce, chili powder, cumin, salt and pepper. When the spicy beans are hot through, spread them evenly across all of the bread. Top with salsa and liberally sprinkle with cheese, covering bread to all edges. The boats will only be half-full. Melt cheese in the oven until it bubbles and begins to brown.

    (Jacki - I leave off this part when I make it) Top Nacho Bread Pizzas with lettuce, olives, onions and tomatoes and serve. You can pick it up with your hands, but eat over the plate (or the kitchen sink, like me).

    Finally, here is a soup I love, but it is pretty spicy!

    Chickpea and Fire Roasted Tomato Soup: 

    1/4 cup extra-virgin olive oil, 2 turns of the pan
    2 cloves garlic, chopped
    2 cans chickpeas, drained
    1 small onion, coarsely chopped
    2 teaspoons ground cumin, 2/3 palm ful
    1/2 teaspoon ground cardamom
    1/2 teaspoon turmeric
    Salt and pepper
    2 cups chicken or vegetable stock
    1 (28-ounce) can fire roasted tomatoes
    1 cup plain yogurt
    Warm pita, any flavor or variety, toasted

     

    Heat a medium pot with extra-virgin olive oil over medium heat. Add garlic and cook 2 to 3 minutes. Grind the chickpeas and onion in food processor. Add to pot and cook 5 minutes to sweeten onion. Season the chickpeas with cumin, cardamom, turmeric, salt and pepper. Stir in stock, then tomatoes. Simmer soup 5 to 10 minutes to combine flavors. Serve with a dollop of yogurt and warm pita for dipping.

     I'm a weird vegetarian cause i don't really like cooked vegetables.   This is one of the first vegetarian cookbooks I could find that makes alot of normal food and most of the recipes are very easy to follow and use only a few ingredients.

     Also, I don't know if you have ventured to Tofu, but I used to hate it and learned it was because I didn't know how to cook it properly.    I watched some of the food network people prepare and make it and now I absolutely love tofu.    Once you learn to cook it right (and I threw about several meals before getting to that point) you can use it in many meat dishes.    I honestly don't like to eat chicken now because IMHO tofu tastes better ;).   Plus tofu is very cheap.   I shop at Chamberlins and pay about $1.49 for a block of tofu which is said to be equal to 4 servings of meat.

     Lastly, you also might want to try some veggie meats.    I love morning stars veggie crumbles.    We sub those in for any ground meat meals (even hamburger helper when I'm in a rush).   We also love Boca Burgers (prepared with a little A-1 for flavor) and Morning Star breakfast sausage links and patties.  

    If you have brighthouse there is currently a Giada (everyday italian) show on the free on demand and it has a super yummy lental salad that I have made as our main entree.

    That looks yummy to me!  I may give this a try for lunches and such, when I don't have to worry about Mr. Picky!!  He doesn't like couscous because it's made from pasta (I know, I know....) I could probably substitute quinoa, but then he also doesn't like feta cheese....argh!!  Smile

    I have tried tofu, and I'm slowly getting DH used to it.  I'm still learning how to prepare it.  I like the taste as well!

    I've tried to Morningstar veggie crumbles, but I haven't tried the breakfast sausages.  I wasn't sure if they'd be any good or not!  I also had a Southwestern black bean and corn burger (by Boca or Morningstar not sure) that I really liked, so I keep those in my freezer.

    Its called "Tracie's Couscous Salad"  It was featured on Paula Deen's show.

    I use plain bulgar wheat for this more than couscous....more filling.  I cant believe your husband doesnt like pasta!!  WOW! 

  • I know, it's crazy!!  Growing up my mom's go-to meal was spaghetti, so I had to re-train myself to make something else when I'm out of ideas.
