So here is the recipe I used as a base for my salad last night...

I used spinach instead of arugula, almonds instead of walnuts (whole almonds, chopped a bit),and I skipped the cheese because I didn't feel like taking a trip to the store just for that.
It was a great salad and I'd defintiely reccommend it. The dressing would be great with apples instead of persimmons too.
