lunch ideas

Hi ladies, I'm looking for some new, healthy lunch options.  Unfortunately I often can't take salads to work even though I love them as I typically eat lunch in my car while driving to my next client.  I usually bring some sort of a wrap/sandwich, nuts, veggies, and fruit and eat any combination but usually not all of that.  I'm just looking for some other ideas as I'm sick of what I've been having!  Thanks!

Re: lunch ideas

  • I make a dip each week, either hummus, bean dip or a yogurt dip.  I use it with my veggies and/or on a sandwich (I really like hummus and cheese sanwiches).  They are good and boost my protein/fiber intake.
  • I know this is just another sandwich, but it's a little different and surprisingly good.  http://allrecipes.com/Recipe/Mock-Tuna-Salad/Detail.aspx

You could bring a soup in a thermos.   I'm not sure how a really chunky soup would work, though.

ETA:  I also meant to suggest filling a pita with a salad that you like.  That way you're still getting your salad but it's more portable.
