Tarheels & Other Pork Tenderloin Fans - dinner party
I need your best Pork Tenderloin recipe, preferably stuffed or wrapped in bacon. It's for a dinner party, so if you have any suggestions for sides, I'd appreciate them, too!

Balsamic roasted pork tenderloin
Preheat oven to 500F
Ingredients:
2 lbs Pork tenderloin
4 garlic cloves
2 TBL mixed fresh herbs chopped (thyme, rosemary & sage work best)
Fresh black pepper
Salt
Extra Virgin Olive Oil
Balsamic vinegar
Directions:
Remove silver skin from pork tenderloin using small sharp knife. You can leave any fat but make sure to get rid of all the tough tendon pieces.
Crush garlic cloves with your chefs knife and then sliver. Cut small slits in tenderloin and stuff with garlic slivers. Rub tenderloin with salt, pepper and chopped herbs, then rub with olive oil and balsamic vinegar.
Roast in 500F oven for 20 minutes (pork will be medium....tiny bit of pink in center) and then let rest at room temp for about 10 minutes and slice.
This is my favorite pork tenderloin recipe. It results in really juicy, yummy meat. I think you could definitely wrap this in pancetta (italian cured bacon) but I think regular bacon would really overwhelm the flavor of the tenderloin.

We make a version of this that is one of our fav dinners and an easy go-to for dinner parties. We up the spice a little and basically put whatever we want/have on hand in the pico.
