Grilled Margarita Salad
Salad:
4 boneless skinless chicken breasts (I just used chicken tenders, because they grill faster)
1 tsp cumin
1/2 tsp pepper
1 bag salad greens
1 avocado, peeled/diced/pitted
1 mango seeded/peeled/cubed
1 cup fresh strawberries (I used more)
Dressing:
1/4 c olive oil
1/4 c frozen limeade concentrate
1/4 c water (or tequila if you desire)
2 tbls fresh cilantro
dash of salt
Directions:
1. mix cumin and pepper & sprinkle on chicken (I rolled the tenders in it) - grill the chicken until done (15-20 mins. for breasts about 7 minutes for tenders)
2. Meanwhile, mix salad ingredients (fruit and greens)
3. In a jar with lid, mix dressing ingredients and shake well. Pour 1/2 the dressing over the salad. Set aside the other 1/2.
4. Cut chicken and arrange on salad - drizzle with the remaining dressing
