Re: any great coleslaw recipes?

  • Gross.  But I have made this before and the coleslaw lovers were big fans.

    • 1 small head cabbage, shredded
    • 3 medium carrots, shredded
    • 1 cup mayonnaise
    • 1/3 cup sugar
    • 1/4 cup cider vinegar

    In a large bowl, combine cabbage and carrots. In a small bowl, combine the mayonnaise, sugar and vinegar. Pour over cabbage mixture and toss to coat.

     

     


    After 2 rounds of IVF & 2 rounds of FET, we were blessed with identical twin girls!

  • i can tolerate some coleslaws, but sorry, no recipes.  too much shredding and chopping, and i don't have a box grater or mandoline

    Yeah, I probably shouldn't do coleslaw seeing as how I don't know what those things are. 

  • well you can always chop using a knife, but i'm too lazy/lack knife skills/lack super sharp knives.

  • You can just buy pre-shredded coleslaw veggies in a bag at Vons.  Then add the "sauce" in the recipe. Done.

  • The bagged slaw and sauce is not homemade though.  I wanted to cook from scratch.

    Rene's Coleslaw

    Recipe courtesy Paula Deen

    Prep Time: 10 min Inactive Prep Time: -- Cook Time: -- Level: Easy Serves: 10 to 12 servings

    Ingredients

    • 5 cups shredded cabbage
    • 1/2 cups almonds, toasted
    • 1 1/2 cups dried cranberries
    • 1/2 cup celery, diced
    • 1/4 cup chopped green onions, white and green parts
    • 1/2 cups chopped green bell pepper

    Dressing:

    • 1/2 cup mayonnaise
    • 1 tablespoon sweet pickle relish
    • 1 tablespoon honey mustard
    • 1 tablespoon honey
    • Salt and pepper

    Directions

    Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid. Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well.

  • I love coleslaw. I could eat it every single day. In fact, a day without coleslaw is a total fail of a day. It's my version of kryptonite, Prozac, and Vicodin all rolled up into one.
