Favorite vegan meat & cheese substitutes?

I have been fairly sick lately with an autoimmune disease.  In doing lots of research, I have found that a plant based diet can be extremely helpful in lengthening periods of remission.  

I have been experimenting with various substitutes for the past week and so far I like soy yogurt, almond milk & I have found some great cookies.  I would love to hear what yummy things you love in the meat and cheese substitute area.

  • I am not a fan of the substitutes. I do use the Lightlife ground veggie & sausage sometimes. Some of the cheeses have caesin in them, so if you're a strict vegan, I don't recommend them.  I thought I would really miss cheese, but I've done pretty well.
  • I have no idea if they're vegan, but I love Morningstar Farms black bean burgers and original grillers.

     

  • I generally don't like meat/cheese "substitutes" but I have had Field Roast at a local foods dinner and thought it was quite good.

    I am not strictly vegan or vegetarian but a lot of my meals are vegan or vegetarian and without any sort of substitute, and I don't feel they are lacking, nor do I do it for any sort of reason. Its just what I've made for dinner, such as a mushroom pasta, mushroom pizza, veggie stir-fry, curry noodles with veggies, etc. (I'm eating seasonally so right now I'm on a mushroom kick before I go on an 'I hate kale' shooting spree lol).

  • I rarely eat meat substitutes anymore because I find that I feel better when I don't have them.  I can't have soy products, which pretty much leaves me with Quorn.

    I've been a vegetarian for 15 years now and have never had a cheese substitute.  How crazy is that?

  • I've been a vegetarian for close to 20 years.  Quorn products are pretty good (although some have egg whites in them), and Gardein products are great too!  Whole Foods sells both brands. 
  • I've never had a cheese substitute and the only "meat" substitute I've had and liked are the Field Roast apple sage sausages which are made with wheat gluten and veggies.

  • In terms of processed cheese substitutes, the only one I like is tofutti cream cheese.  For things like mac and cheese, lasagna, pizza, etc., I usually make a squash sauce that is rich and creamy and gives me all the comfort food feel of cheese.  I roast a squash (usually butternut).  While that's cooking I sautee onions and garlic until they are all soft and gooey.  Once everything is done I blend it together with olive oil.  Delicious.
