I am having three or four friends over for lunch on friday, and am trying to come up with menu ideas. It needs to be fairly simple, but impressive. It's my first party since we moved into the house, and I want it to be nice. I work all week, and only have time to do prep work in the evening before, and they are arriving at 11. I am not a seafood eater, but anything else would be great.
Also, some decor ideas please? Something simple and nice, that will help make everyone feel welcome.
Re: lunch menu ideas please!
Since you're short for time, something that you can more or less prepare the night before or something that's just quick would be best. Here are some thoughts:
Butternut Squash Galette
Grilled Eggplant and Zucchini Sandwiches with Sun Dried Tomato Marinade
Broccoli and Cheddar Quiche
As far as decor goes, I would just get some pretty flowers and set the table. To make it look modern and chic, keep the flowers all within the same tone or just use one type and color of flower. I love how these look.
how about chicken salad, made with green apple and craisins? It's so good - mix it with a little mayo, salt and pepper, and maybe a little lemon juice. To make the chicken super soft, there is a way to bake it in cream and it comes out amazing.
Serve it mounded on a pretty platter with a tray of assorted rolls/bread and a simple salad.
