I have no idea what to make for dinner tonight. I guess I should make the salmon in the fridge before it goes bad eh? Not in a fishy mood for dinner tonight.

We're having Tilapia marinaded in mojo style seasonings and potato and broccoli in a creamy lemon sauce.
we're having leftovers, BUT, if you have chicken pieces, I have an awesome recipe for you! Just sprinkle garlic salt all over the pieces, place in casserole (sp?) dish skin side up and then put brown sugar all over. Put in 375' oven for about 45min-1hour. DELICIOUS!! The chicken is ultra juicy, skin tastes wonderful (especially if you let it brown and get crispy!)........heaven. I just discovered this recipe on allrecipes.com and am telling everyone about it because it's so easy and delicious!

I have been thinking about dinner all day because it is cooking in the crock pot as we speak. It smells soo good! I put country style pork ribs in with a homemade sugar free BBQ sauce. Yummy!
I will also saute up some fresh grean beans with carmalized vidalia onions and pine nuts, and probably cut up some green pepper to cool off our palate. Yummy - I can't wait for dinner!
I was just having this discussion with my hubby. He is home from work today and I asked him what he wanted because I have no meat defrosting. His choices are:
Turkey Mini Meatloaf with mash potatoes, broccoli, and corn bread OR Chicken Enchiladas OR Vaca Frita with Rice and Black Beans and a cucumber from the Framer's Market
I think his answer was: "Let's have breakfast for dinner!" Which he makes a killer one - so I guess I'm off the hooker and will spend the evening walking Mr. Porter the Pup.
Mmm sounds super delicious but I gotta be careful with the sugar because dh has to watch the sugar intake. Thanks though.
Mmm... Chicken enchiladas sound so yummy! I think I'm putting them on the weekly dinner menu!
LoL. They are SUPER easy. I have the receipe from Tyler Florance. I can send it to you when I get home OR you can find it on Food Network. They were so good. Justin tells everyone about how "professional" they looked. LoL.

You buy flank steak, put it in the pressure cooker, then saute it in a frying pan. YUMMMM-O! It's my hubby's favorite - it's Cuban dish!?
ooh I love vaca frita, I order it all the time when we go to cuban restaurants.
I don't know what we're having for dinner yet. Probably some kind of chicken-something. :P

Scheduled IVF for April 2013--SURPRISE, don't need it! EDD 9/6/13
Buy flank steak and boil until tender (1-2 hours) or you can pressure cook it for about 20 minutes (but that scares me!)
Once meat is tender rip up the meat.
In a little bit of olive oil sautee onions and minced garlic.
Throw in the meat add lemon and lime and cumin (salt and pepper to taste)
Continue to stir meat until its slightly crispy.
Done!
That is exactly how I make it! The pressure cooker scares me a little to I must admit but it's worth it to avoid the 1-2 hours! I don't have that kind of time - or patience

I made the vaca frita on Saturday and just left it boiling while I cleaned so it didn't phase me. Its def. not a during the week meal! I Hubby made awesome beans!
No I'm hoping to make it soon!! I found a Bravo supermarket close to my house on 50 between Dean and Rouse (publix didn't have flank!) so I'll go there for the tasaho!!
Well..... MIL is in town visiting us and she said it was my turn to cook tonight!! Last night she grilled steaks, baked potatoes and steamed broccoli!!
Tonight, I made Basil Spelt Linguini, grilled chicken, grilled eggplant and then I roasted tomatoes and sauted some garlic, fresh oregano and added cream/milk and parmesian cheese!! OMG what an amazing roasted tomato cream sauce!! I was pretty impressed, and it was totally off the cuff!! I just decided to add the milk and cheese to the tomatoes since MIL wanted a sauce for pasta instead of just butter.
Needless to say..... I impressed her.... and ladies, thats not an easy task! haha!!
