basically heat olive oil and garlic in a pan for 2 minutes, cut potatoes into 1/4" sticks. Remove oil from heat, strain out garlic and reserve on the side, toss potatoes in strained oil and a little salt and bake at 450 until golden brown, then toss with garlic, a little more salt, and parsley.
Instead of salt or parsley though I used creole seasoning. They were spicy and delicious.
