I'm trying my best to eat local and seasonal, but it's not exactly easy here in the midwest right now! I have somen frozen produce from the summer (mosly berries and some corn and peppers), but when it comes to dinners right now, I feel completely uninspired! Any ideas beyond chili or stews?
Re: what are you eating?
I'm doing local and seasonal, and I hate frozen veggies, and don't do canned.
I was about to scream if I had kale again, and then I remembered mushrooms!! And I was really effing sick of soups and stews.
Pasta -- with jarred organic tomato sauce
pasta with sauteed mushrooms (can add in beet greens too)
homemade pizza (no sauce or jarred organic) with mushrooms -- I've done spinach and mushroom with parmesan-style cheese, or you can do mushrooom, feta, olives, sun-dried tomatoes, even artichoke hearts..
I've been taking curried chicken sandwiches with dried cranberries and spinach to lunch and having it with an apple and nuts
I also made curried noodles with mushrooms and carrots
breakfast for dinner - yams and eggs (sometimes I add spinach or beet greens), mushroom and cheese omelette, egg sandwich
even though its still soup, Asian soups have been a nice change for me too -- miso with shrimp and greens, thai coconut soup with chicken
My week's meal plan is in my blog. It's not 100% local/seasonal, but we do take advantage of our local co-op quite a bit.
