Post Destination Wedding Open House Reception Menu
My stepson and his wife just got back from their wedding in Las Vegas and will have an open house reception next month. They would like to serve appetizers, and I have offered to make most of them. Here's the menu I am considered-any suggestions/comments would be appreciated. We will not have the space or facilities for serving hot food, and may not have tables to seat every guest, so we were thinking finger foods.
Punch/Soda/Water
Cake (of course)
Cookies
Meatballs (crockpot)
Rollup Sandwiches
Shrimp
Vegetable Tray
Chicken Salad Cups
Grapes/Cheese Spread/Crackers
Anything else?

Quick question. You won't have the ability to serve anything hot? Is this in their home or at a reception hall?
I've seen lots of menus like this and they always seem kind of strange to me, like they're not cohesive. For an event taking place in February, there's not much on here that's seasonal and it seems like a spring menu.
It seems just kind of random and thrown together, to be honest.
What time of day will it be held, and how many people are invited? Could you get away with just doing a cake and punch reception?
I think you have a decent start, but agree with others that it seems a little random. If it were me, I would probably do the following:
Vegetable Crudite Platter with Lemon Tarragon Dip, Cheese Assortment with Crackers and Fruit, Spiced Mixed Nuts
Roast Beef Crostinis, Chicken Salad Cups, Shrimp Ceviche in Cucumber Cups
Wedding Cake, Stuffed Strawberries
Punch, Soda, Water, Champagne
For that many people, and with that huge restriction, I would strongly recommend just doing a dessert type reception. You could easily do miniatures so that guests have an easier time balancing eating and standing. You can do desserts as high or low brow as you want. The great thing about them is that they don't usually need to be hot and you can usually do them ahead of time, so you won't be scrambling the day of to complete everything.
