I made vaca frita last night. It turned out amazing! I made it with white rice and black beans. I served it with a Framer's Market cucumber on the side.

 PS: Farmer's Market veggies = amazing!

  • It's flank steak.

    You boil it until tender (2-3 hours) or pop it in the pressure cooker for 20 minutes like I do :)

    Then you sherd it with a fork into strips.

    I cook it with sofrito - take half an onion, half a red bell pepper, half a green bell pepper and 3 cloves of garlic. Put it in the food processor and blend until it's fine.

    In a skillet pan, put some olive oil (or non stick spray which I used) and all of the shredded meat. I put it on med-high heat. Add about 4 tablespoons of the sofrito and a little bit of water. Just keep moving it around the pan until it's a little crispy.

     Boom. You have vaca frita aka fried cow :)

  • Yum!  Did you make the black beans from the can or in the pressure cooker?  I make killer ones out of the can but I haven't braved doing them fresh from the pressure cooker yet.

    Hey that recipe sounds very similar to the ropa vieja recipe that Mary gave me.  Do you know what the difference between them is?  Is it the amount of oil?  or maybe the tomotoes?

    Man I wish D loved spanish food more.  I think he got overloaded living at his mom's house.  I LOVE all of her recipes!

    I don't think I've ever had vaca frita with sofrto, that's kinda the ingreditens I use when I make beans (also from the can-pressure cooker = scary).

    It sounds good though maybe I'll try it next time.
