Need some Brunch Menu Ideas
I am having a brunch for a bunch of girlfriends (~10) in a few weeks, normally I have a bunch of go-to recipes that are not a problem, but in this group I will have two vegetarians (just no meat), and one who is VERY allergic to dairy. Any thoughts on a menu that will have some things everyone can enjoy?
Re: Need some Brunch Menu Ideas
My niece has severe dairy allergies, for Xmas breakfast each year we make pancakes with soy milk (there's a "heart healthy" pancake mix at supermarkets that's dairy free.) Maybe you could have a pancake bar with different toppings: strawberries, whipped cream, walnuts, blueberries.
This year, I also made her little donuts. Giada has a super simple recipe on foodnetwork.com.
For your vegetarian friends, how about a veggie quiche?
GL!
Thanks for the ideas, I thought about pancakes, but didn't want to have be in the kitchen "flipping" all morning. I was thinking of making a bunch of things that way everyone can find something. Here is my initial plan...any thoughts or suggestions? Is it too much?
Baked Egg Custard with Gruyere and Chives, Eggs with Spinach in Ham Cups, Baked French Toast with Fruit Compote, Oven-Browned Potatoes, Fennel and Orange Salad, Steamed Asparagus with Vinaigrette, Sweet and Spicy Bacon, Cranberry Vanilla Coffee Cake, Maple Blueberry Parfaits
That seems like too many things for 10 people - I'd do one egg dish that everyone can eat - so no meat or cheese, the french toast without butter or milk so everyone can eat it, and then maybe tree of the other side type dishes - the bacon, either the asparagus or oranges and the coffee cake. I'd cut the yogurt or do it as an app when people get there - use soy yogurt to make one for your friend who can't eat dairy.
