I haven't actually made the poppers before, a co-worker has made them and she gave me the recipe...
Slice the jalepenos in 1/2 lengthwise, and using a spoon, scoop out the membrane & the seeds. You'll also want to wear gloves while handling the jalepenos, of course.
Mix the cream cheese & shredded cheese together
Fill the inside of the jalepeno up with cheese mixture, up to the edge. You don't want to over fil them, or it'll bubble over & make an even bigger mess.
Wrap them in un-cooked bacon. You can either tuck the end of the bacon in, or use toothpicks to keep them together.
Bake at 350 for one hour on a cookie sheet.
She says to beware, because the pan will look really yucky.
