I'm making a yellow cake (cake mix) and it calls for three eggs...I don't have any eggs but I have egg whites. Will that work?

LMAO, I hope you were joking! The mix is probably already yellow- it has nothing to do with the egg yolks, in this case (I know it does it real cake batter, though!). You can use whole eggs in white cakes, too.
You have to substitute around two egg whites for each egg, and in cakes, it doesn't make them as soft and tender. But, it's doable.

I thought of your cupcakes and figured it would be ok (I'm totally craving them BTW!).
That is mostly because it produces the delicate, airy flavor that is common in white cakes, but you're right, it also makes the cake a pure, lovely white.
