Any good meals planned for the week?
What are you cooking this week? I want to hear.
I have tofu I need to use so I think I'm going to use the recipe that jonesy rec'd and replace the shrimp with tofu.
Re: Any good meals planned for the week?
Ooh! I'm making your guys' curry shrimp recipe. Pretty excited about it! Does it reheat well?
I'm actually meal planning right now since I'm going shopping tonight and want to try some new things. I'm thinking either stuffed peppers or stuffed tomatoes. Maybe a spicy coconut thai soup... I'm kind of obsessed with coconut curry right now.
get out of my head - I was just making my shopping list! I have some fish and am going to make this:
http://www.foodnetwork.com/recipes/ina-garten/parmesan-roasted-broccoli-recipe/index.html
I saw her making it and it looked really good - not to mention easy and healthy (good fats).
The coconut currey shrimp heat up just fine for me!
Wan - I'm going to try uncanny's baked potato soup. Have you tried anything from ESF's blog? I like her stuff too! Do you follow nestie Joelen's blog, insane! Spicy Savory Sweet blog, or Mary Ellen's Cooking Creations blog? Those are some of my favorites.
Pierogies and Veggies Saute. I can't express how happy I am that Ralph's starting carrying Mrs. T's
Other than this (my comfort food), we have coconut chicken curry and pork curry (Vs comfort food). I love how mine is a 10 minute process and his is 4 hours. I may be lucky enough to have him make some banana fritters too.
I made her potato-leek soup last week. It was good and we had enough leftover to use as a side for two more meals.
This week I'm planning on making a couple chicken recipes from MrsWindyCity's blog (ellysaysopa.com) and ESF's stuffed acorn squash.
Yup - the shrimp reheat very well.
Last night we grilled up ahi with a rosemary/pepper/sugar/salt rub from the Batali grill cookbook. OMG, so good!
Tonight we're having this. Really yummy and there are leftovers.
I am making this http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1924724 for dinner tonight w/ a tomato goat cheese salad
I made this last night: http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1896133 w/ brown rice.
I am making this on Thurs: http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1896045 w/ salad and rice
I had a slight panic attack after I moved out here when I couldn't find Mrs. T's for awhile.
I'm eating leftover red beans and rice right now. I usually don't think about cooking until Friday. So, I have some frozen pizzas and pot pies in my future the rest of the week.
this is one of my favs! but I've made it too many times and we've kind of OD'd on it. the frozen brown rice from TJs is a lifesaver - I also usually add shrimp.
Okay, shopping list prepared!
Thai coconut curry shrimp with carrots and snap peas with brown basmati rice from you girls.
Buffalo chicken, spinach, tomato, and ranch wraps on WW tortillas.
Roasted Pork and Autumn Vegetables.
Lemon salmon with roasted broccoli and brown rice.
I love cooking healthy!
All about the TJs frozen brown rice. I'm so glad you posted about this one months ago. I totally understand about ODing on a dish, but thankfully, we're not there yet.
btw, this was REALLY good. I used frozen broccoli florets and omitted the garlic (by mistake) and basil (didn't want to buy fresh).
I keep on meaning to make enchiladas, I don't know what my issue is with making it!
That broc looks awesome. I do need to figure out a different way of making it other than plain steamed. Thanks/
Bobby Flay's Balsamic Glazed Roasted Vegetable Meatloaf (except I sub out the pork and use half turkey and half lean beef). You can find it on Food Network.
It tastes great, is super easy (with help of a little food processor to do the dicing), and you get protein, veggies, and a little bit of carbs too.
Last night, H made turkey meatloaf burgers. Those were pretty darn good.
Tonight, H is making shredded chicken tacos. Also pretty darn good.
