I am having some friends over for brunch on Saturday. For brunch, I usually whip out my tried-and-true quiche recipe or I make a french toast casserole with a praline topping, with fruit salads/regular salads. I'd like to branch out a little and try something different. Does anyone have ideas for brunch that are a little nicer/look fancier than casseroles or whatever? Thanks!
Re: Impressive brunch ideas?
Belgian waffles with home made fruit toppings and whip cream. Yum!!
I make these semi homemade cinnamon rolls for brunches and EVERYONE loves them. They are huge and gooey and melt in your mouth.
Over-night Ice Cream Cinnamon Rolls
Rolls:
2 pkgs Rhodes frozen cinnamon rolls (in a bag, not in a pan)
1 C brown sugar
1 C white sugar
? C plus 2 T butter
1 C vanilla ice cream
Grease 2 (13x9 inch) pans . Put frozen rolls into pans. In a saucepan, combine other 4 ingredients in saucepan and bring to a boil over medium high heat. Boil for one minute. Pour hot mixture over frozen rolls. Set pans of rolls in cold oven overnight. Next morning, bake at 350 degrees for 25 minutes. Remove from oven and while hot, frost with powdered sugar icing.
Powdered Sugar Icing:
2 C powdered sugar
2 T butter
1 t vanilla
3-4 T milk or light cream
In medium bowl, combine podered sugar, margarine, vanilla and milk until mixture has consistency of a glaze. Pour mixture over warm cinnamon rolls.
I served mini fritattas (cheese and prosciutto), roasted red potatoes with some red and yellow peppers, fresh fruit, fresh baked orange cranberry scones, fresh baked blueberry muffins, and chocolate truffles. Coffee, tea, OJ, and mimosas. I displayed them on my island in the kitchen at different heights to make it look more pleasing to the eye. It took up less space as well.
Yum! All awesome ideas.
Gem, I use Paula Deen's French toast casserole recipe. I modify it like crazy, though, and use milk instead of cream and fewer eggs (with some egg whites thrown in). I also use half the butter for the praline topping. It's still awesome. http://www.foodnetwork.com/recipes/paula-deen/baked-french-toast-casserole-with-maple-syrup-recipe2/index.html
I have a mini frittata recipe and biscotti recipe in my blog under brunch. Plus you can make the biscotti early in the week to save time.
