Mesa....

I made the carmalized onion chicken tonight and it was AMAZING!!!! We both loved it and are definitely adding it to our rotation!

  • Woohoo! Glad you liked it! I think I OD'd on it... it's out of our rotation right now Smile but I made it a ton last year!

  • I wasn't sure about the whole rasberry jam thing, but it was so awesome! I'm adding more onions next time so I can pile them onto the plate, I love it!
  • I love raspberry jam Smile. I think I use a whole large onion-- we always have more onions than chicken!

  • I made a crack at the Cranberry Walnut Muffins and they turned out "ok". I think I did something wrong. In your recipe, it calls for oats but in the directions it doesn't say what to do with them. So i just threw them into the mix and I also used old fashioned oats instead of quick oats. What do you think? Was it the oats thing for me?

     I actually just ate and they're not bad, but I feel like I did something wrong with the oats!

    I just add them to the dry ingredients... my friend made them too (but used super whole wheat flour) and they were really dry. I think all I had was "quick cooking" oats for some reason  but I always use the old-fashioned without a problem. Next time I use that recipe, I'm adding in some applesauce to make it less dry.
