I think your menu sounds delish! (You might want to include hard and soft taco shells)
I don't really think of cornbread as Mexican food, but I love cornbread so I'd be happy to see it there.
How about this for dessert? If it were me, I'd buy the ice cream already made and maybe make the chocolate sauce.

I'd consider swapping the corn bread for some sort of corn- roasted, mexican, something like that. Otherwise it looks pretty good.
You could totally do Corn bread...I live in AZ and have had it at mexican places. Just drop a can of diced chilies or jelapinos in the mix
