I'm looking for healthy lunch options. I'm going to attempt to limit my Lean Cuisine intake to only one per week. I've thought about wraps, but that's about it. I can't seem to think of anything else that will fill me up.
So what types of lunches do you bring for work that are healthy? I do have access to a microwave so things can be reheated if needed. And something that I could make on a weekend and last all week would be great too. TIA!

I bring a salad to work almost daily. I try to change the mixins a little bit each day, some of my favorites are: dried cranberries, fresh peppers, roasted peppers, nuts (I will do most of them, pecans, cashews, almonds, walnuts), carrots, strawberries, artichoke hearts, mandarin oranges, hard boiled egg, etc. I rarely eat cheese, but every once in awhile I'll do a little fresh mozzarella in there as well. I can't wait until the spring so that (hopefully) I'll either have my own home-grown lettuce and/or fresh farmers market. Personally, I think heads of lettuce are generally the better deal, compared to the bagged varieties, and organic lettuce stays SIGNIFICANTLY fresher, longer than conventional lettuce. I wrap my lettuce with a dish towel and put it in the bottom of the fridge and sometimes it'll keep as long as 2 weeks.

My usual lunch is really boring, but I feel like it's what keeps me feeling the fullest, the longest, with the healthiest food that's practical (for me) for everyday preperation. My usual lunch is a turkey sandwich w/ a lil mayo & bunch of mustard on whole wheat w/ a slice of cheese and carrots. I will also bring in dinner leftovers 1-2 days a week. Sometimes I'll make chicken salad to last a few days, but that's not really healthy, I just like it. Do you think you could make a batch of soup to last you the week?
I'll make homemade spaghetti sauce in big batches, freeze it, and take a container out to thaw and mix with noodles over the course of a week.
I also made a quiche (the recipe is in the "vegetarian" post) that I've been eating all week this week. I think it's decently healthy because it's got lots of veggies in it, and I like it reheated about as much as I liked it the first time.
You could also do a vegetarian chili- there's a good roasted vegetable chili recipe on the Prudence Pennywise blog.
