It makes a pretty yummy herbal tea, especially if you cut it up into largish lengths and crush them a little, then simmer on the stove for a bit.
If you use it for cooking, make sure to only use the more tender part of the stalk, near the bottom.
Hmm...I know I've used it in a recipe before, but I can't recall what.
