I'm throwing my DH a Mexican Fiesta for his 30th birthday and I'm looking for some ideas for food, drinks, decor, or anything else you'd like to add.

Decor:
Bright colors
You could use empty Corona bottles as flower vases (use bright colored flowers like reds and yellows) on the tables and scattered around the house... I realize flowers aren't a "man's" decoration, but it will look nice with a Mexican theme twist.
You could have Mexican/Latin music playing... if you have it on your TV or downlowd a few songs on your ipod.
Sombrerros (sp?) displayed on tables
Food:
White cheese dip (like at the Mexican restaurants):
1 pound white american cheese
2/3 cup heavy whipping cream
7 ounce can diced green chilies (or use jalapenos if you want it spicy)
*Melt all together and keep warm in a crockpot. Give it a good stir occasionally while it's melting.
I also have several Mexican recipes in my blog (in siggy) that you are welcome to look at (including tres leche cake for dessert).
Dessert Ideas:
Churros, which are kinda like donut sticks in a way.
Flan
Flour tortillas sprayed with butter flavor PAM and sprinkled with cinnamon & sugar then baked in the oven until crispy.
Dulce de Leche Ice Cream
Drinks:
Margaritas
Mexican Beer (Corona, Modelo, etc.)

I would also suggest a tequila shot station - bottle, shot glasses, limes, salt.
For food, how about a Taco bar?
For decor, I think you can do bright colored paper lanterns.
For fun, you should definitely get a pinata. I guarantee that it'll be the hit of the party.

We did a Taco Bar, it was easy, and the only thing that really needed to be kept warm was refried beans and meat. People made Tacos, Taco Salads, and this worked great for Vegetarians too.
We also did a pinata, and it was a great hit.
We also did chip and salsa platters on each table, along with snack sized candy bars.
The decor- all bright colors, hang paper flags(can't think of the names) but they're sold on the oriental trading website. Food- taco, fajita and quesidilla bar would be neat, for drinks, of course margaritas is a given, a sangria bar would be also cool, red, white, champayne.....that's all that I'm coming up with for now. Sounds like so much fun!
