Things
1. The difference between H's creole and gumbo is the consistency. Yes, it has taken me four years to learn this. I like them both, but prefer creole, because he serves the rice on the side when he makes creole. I like being able to make it low-carb.
2. Our new landlord came by for the quickest walk-through, ever. She wasn't very chatty and we still aren't 100% sure what is going to happen when ownership of the duplex changes hands.

Yeah, gumbo has a roux which is different from shrimp creole. I have to admit I've never just heard it just called creole. It's always shrimp creole, but it's all the same thing.
