Things

1. The difference between H's creole and gumbo is the consistency. Yes, it has taken me four years to learn this. I like them both, but prefer creole, because he serves the rice on the side when he makes creole. I like being able to make it low-carb.

2. Our new landlord came by for the quickest walk-through, ever. She wasn't very chatty and we still aren't 100% sure what is going to happen when ownership of the duplex changes hands.

3. I need a new client.

4. It is supposed to snow. I would love love love another snow day. They are the best.

  •  Yeah, gumbo has a roux which is different from shrimp creole. I have to admit I've never just heard it just called creole. It's always shrimp creole, but it's all the same thing.

  • The creole he makes has a roux as the beginning, too. I think his brother and he just call things weird names that no one else uses. The basic difference is his creole is soupier and he makes it with almost any protien, not just shrimp. Either way, the gumbo was tasty.
