I came up with the bright idea to cook Valentine's Day since we don't get to spend much time together. He thinks it's the best idea EVAR, but I can't come up with anything that's not too complicated or too messy for transporting to his place.

You should roast a chicken and make roasted root veggies to go with it. It takes some prep, but once it is in the oven, you can forget it. Also, you can make this in one pan, which = easy transportation. TIA!

Can I come have Valentines day dinner at your house? I love beef bourguinon. My mom made some a couple months ago and it was soo... good.
spaghetti is messy to eat. not a good date food. neither is anything with too much garlic or onion.
can you cook at his place? that might be fun and you can do it together.
i also enjoy the roasted chicken with root vegetables. it's easy, and who doesn't like chicken?

He can't/doesn't cook, so his kitchen isn't equipped. I was going to cook since I'm off all day and take it over when he got home and showered.

Then something all men like. Meat and potatoes. I'd go with a pot roast with rosemary mashed potatoes, roasted carrots, and baked onion (or just the whole shebang in with the pot roast)
You can put it on in the morning in a crockpot, and voila! Done by the time you get home, and ready to haul over.
Take a salad and some crusty french/italian bread and you're set!
Garlic stuffed pork roast, creamy garlic mashed red potatoes, oven grilled asparagus with minced garlic & red kool-aid!
