Vegetarian Cookbook Suggestions?

I thought some of you might be able to help.  My DH & I aren't vegetarians but we strictly limit our meat consumption to no more than 2x/week.  With that being the case, I'm always on the lookout for good vegetarian recipes. 

Has anyone come across any cookbooks w/ veg recipes that they've loved?

  • "Vegetarian Cooking for Everyone" by Deborah Madison. It's (IMO), the only cookbook bible you'll ever need. I have hundreds of cookbooks and this one I use every day- tattered and stained!

    It's a huge book but easily accessible and she allows for you to improvise with meat, if you want

    I agree, I like this one.  I have another one of her cookbooks too - Local Flavors - that is probably 75% vegetarian, and a lot of simple stuff. 

  • I second Local Flavors, A Year in a Vegetarian Kitchen, Vegetarian Cooking for Everyone, and all the Moosewood cookbooks.  I have all of these and use them all the time.  A Year in a Veg Kitchen is currently my favorite, but that's probably because I just got it.  I have 6 Moosewood cookbooks and use them all frequently, but Simple Suppers is probably my favorite.  We also have a ton of recipes from Vegetarian Times magazine.  Their online recipe finder is really great, you can tell it what ingredients you have and it gives you a recipe for them!

     I second this. I LOVE this book. I use it for everything from breads, to main dishes to side dishes and desserts. Mine is also water marked and stained and I've had to glue it back together twice.

  • I really love Heidi Swanson (from 101cookbooks.com). She has two cookbooks, though I feel you can get most of the recipes from her blog. I have bought them because I like her blog a lot and I read that for free so I feel like I want to support her, but I would recommend starting with the blog and seeing how you like it. I don't think she posts as much as she used to, so the older stuff is better IMO. We really liked the chipotle sweet potato pot pies.
  • The Vegetarian Mother's Cookbook is great!  I'm not a mother, but I still love it & use it more than any other cookbook I own.
  • My fav because I am a lousy cook but I like good quick food is the PDQ (Pretty Darn Quick) Vegetarian Cookbook:

  • All of Sarah Kramer and Tanya Barnard's books are great- I just made a cheesecake made from tofu from their book How It All Vegan, and it's delicious.

    I like 100 Best Vegetarian Recipes by Gelles as well- delicious french onion soup.

    These are my two go-to books. I have others, but they aren't nearly as good.
