Vegetarian Cookbook Suggestions?
I thought some of you might be able to help. My DH & I aren't vegetarians but we strictly limit our meat consumption to no more than 2x/week. With that being the case, I'm always on the lookout for good vegetarian recipes.
Has anyone come across any cookbooks w/ veg recipes that they've loved?

"Vegetarian Cooking for Everyone" by Deborah Madison. It's (IMO), the only cookbook bible you'll ever need. I have hundreds of cookbooks and this one I use every day- tattered and stained!
It's a huge book but easily accessible and she allows for you to improvise with meat, if you want

Bittman's cookbooks are like Bibles in my home.
I agree, I like this one. I have another one of her cookbooks too - Local Flavors - that is probably 75% vegetarian, and a lot of simple stuff.
I second this. I LOVE this book. I use it for everything from breads, to main dishes to side dishes and desserts. Mine is also water marked and stained and I've had to glue it back together twice.

All of Sarah Kramer and Tanya Barnard's books are great- I just made a cheesecake made from tofu from their book How It All Vegan, and it's delicious.
I like 100 Best Vegetarian Recipes by Gelles as well- delicious french onion soup.
These are my two go-to books. I have others, but they aren't nearly as good.
