I am preparing some meals for after I give birth. I am just wondering how cooked rice freezes? Does it come out mushy, or will it be edible. Also if you have any suggestions for meals, throw them at me. So far I have spaghetti, homemade mac and cheese, tuna casserole, and I was thinking chicken and rice casserole. I might buy a few frozen lasagna's from the store, but I am not sure what else to go with?

Some stuff I like to freeze:
chicken curry, spanakopita, meatballs, soup, beef stew, chili con carne
Do you have a rice cooker?
I've never frozen rice, but I have a rice cooker, so I just throw the rice into the cooker and it cooks itself - really not any more work than defrosting frozen rice. Then you have hot fresh rice with your frozen meal

Chili is good to freeze.
I have a couple other recipes that freeze pretty well - I'll have to update when I get home.
I think you can freeze rice - Arctic Gardens just came out with a frozen rice/veggie combo.
If there is a Superstore near you, all the PC lasagna/pasta type dishes are on sale for $6, including chicken and seafood lasagna, canneloni, etc
yup you can freeze rice. It doesn't mush, actually freezing rice is a hint on how to save rice you have over cooked, it dries it out I guess a bit.
For freezing food pre-baby, I made turkey n' stuffing meatloaf (mm thanks Rachel Ray). One loaf lasted DH and I three whole meals!
I also did lasagnas, and made freezer bags full of already diced meat and cut veggies and marinades/sauces so I could just throw them in the crockpot.
We don't have a Superstore but I will assume that No Frills will have them. If not, I can always check out Loblaws. Thanks for the heads up!
you can freeze rice, when we make basmati rice we make it in big batches and freeze it in portions so when we have leftover beef or something Adam mixes the meat and rice with some gravy for a lunch. ?And I've used it in a pinch as a side if I run out of cooking time in the evenings.
