Dinner for 6 on Friday - help??

I am going to do chicken cordon bleu (baked chicken breasts stuffed with swiss and ham), asparagus, and something.

I bought sweet potatoes to make sweet potato casserole but on second thought, I don't think the flavours would be very complimentary. What is an easy dish I can either make ahead or at the same time that would go better???

We are having chocolate fondue and fruit for dessert

Since it's a weeknight and the prep for the chicken is time consuming, I'd just go with something easy for the starch.  Maybe roasted potatoes or rice pilaf.  Sounds yummy.

Thanks for the ideas girls!!! I really like the idea of wild rice - not boring white rice, but I have some at home (so I don't have to go shopping again!) woohoooo thx! I will save that parsnip recipe for later - I have never tried parsnips!
