OK- so I posted on here a week or two ago about raw foods, etc. I've gotten a few cookbooks and have been experimenting with some recipes- so far, all of them have been ridiculously tasty and while I'm not sure if it's a placebo effect, I've felt AWESOME for the past week.
That said, here you go with my fav sweet recipe thus far:
(Some of the ingredients you may not have on hand and might be pricey, but once you have them, you can make tons of recipes at the drop of a hat)
Tart Crust:
Grind 2 cups of raw almonds in a food processor until fine (stop before they become oily). Transfer to a bowl and stir in 1/4c of coconut oil and 1/8 cup of raw agave nectar, pinch of salt.
In a mini muffin pan lined with saran wrap, fill each muffin slot with a scoop of the crust (it takes about 2-3 TBSP each) and mold into the shape of the tin. Set aside in the fridge for 30 minutes or until hard.
Vanilla Creme:
Combine 1 cup soaked raw cashews (soak 1 cup for 2 hours in water beforehand), 1/4 cup plus 2 TBSP of water, 2 TBSP agave nectar and 1 teaspoon vanilla extract in a blender until very smooth and creamy. Chill for 30 minutes in the fridge.
When ready to assemble, take the tart crusts out of the pan, cover with vanilla creme and put sliced strawberries on top (you could also use blueberries, pineapple chunks, whatever you have on hand or that is in season)-
Drizzle the tops with a bit of agave and keep cool until ready to serve
(Makes 12 mini tarts)
These are ridiculously easy to make (not including soaking time)- it took me maybe 15 minutes to prep everything and then the chill time. My dad ate most of them! You can PM if you have any questions.

I bought "Raw Food Made Easy for 1 or 2 People" by Jennifer Cornbleet-
It's VERY basic, but I suggest it for getting started- mostly basics that do NOT require a lot of equipment (ie: dehydrator, etc)-
Also, "The Raw 50" by Carol Alt- I "like" it a lot- some of the recipes are a little complicated and most require dehydrating and/or soaking and germinating your own seeds or nuts, which, frankly, doesn't interest me- but I can improvise with most of them and I do really like the book. This tart recipe comes from her book.

I understand it's raw so you didn't bake the tart shells, I'm curious how they stayed together. Coconut oil solidified as it cooled I suppose?
Yup, the coconut oil cooled when tarts were in the fridge. I cannot rave enough. I actually ate 2 of them for breakfast this morning and didn't get hungry for 3 hours- they're incredibly filling
