I usually keep it pretty simple:
Corned beef and cabbage
Irish soda bread
Guinness and ginger ale tinted with green food coloring
For the table, I usually just do an off white table cloth ( a green one would probably be better, but I can't find one that I like) with three small bouquets of yellow daffodils tied with green ribbon. On each plate I make shamrock lollipops (just buy the molds, sticks, and green chocolate from craft store) and give those as favors. I usually have small tea lights lit as well.
I put the comcast sounds of the season station on for background music. They play Irish music around this time of year.
For dessert, I try to incorporate green somehow. Last year I got cupcakes with shamrocks, the year before I had pistachio ice cream. This year I might do something with irish cream ice cream and maybe some green shamrock sugar cookies.
I make Guiness stew and Irish soda bread. My mom always does tea served in Belleek china.
I saw something once where people made mashed potatoes and served them in a martini glass with garnishes.
Another nice idea is salmon.
