Mmmmm this is what I made last night. It's creatively named from way back when as White Chicken Gravey...lol.
I love gravey, so I double the gravy recipe, but here's the regular recipe
Gravy:
1 can of Cream of Mushroom soup
4oz of sour cream
Mix the soup and sour cream until it's all blended together.
Meal:
Take 2 - 4 pieces of boneless skinless chicken (depends on # of people eating) and put in an oven safe caserole dish.
Cover the chicken with the gravy and palce the lid on the caserole dish (or foil if you have no lid)
Cook for an hour and a half at 350 degrees.
With this I heat a can of corn, make mashed potatoes, and maked garlic bread.
Vanessa's EASY Chicken Tikka Masala
Saute 1 tsp minced garlic (from a jar from costco) in 1 tbsp butter for 1 min. in sauce pan.
Add:
2 tsp cumin
2 tsp paprica
1/2 tsp salt (more to taste)
black pepper to taste
1/2-1 tsp lemon juice
8 oz tomato sauce (I use traditional ragu from a jar)
8 oz heavy cream
Simmer for 20 minutes or so.
Then drain, and shred meat from 2 cans of chicken (I buy at Costco or Sams).
Simmer for another 10 minutes.
Serve over white rice.
We make shrimp and orzo a lot. I get a bag of frozen shrimp (they're usually buy one get one free at bloom) and defrost that while the orzo cooks.
For the orzo:
One cup of orzo
14 oz. chicken broth
Put the orzo and broth in a sauce pan and simmer until the broth is almost gone (about 15 minutes or so). Throw in the defrosted shrimp and frozen peas until the shrimp is cooked through (5 minutes at the most). Once it's done, add a handful of parmesan cheese, stir, enjoy!
It's a super easy and quick meal.
Son of a gun, where were you this weekend? We threw a bag of bloom shrimp away!!! We bought them when they were buy one get TWO free and that third bag had been sitting in our freezer for ages!

in a crock pot mix:
1 cup brown sugar (medium or dark is best)
1 cup ketchup
1-1 1/2 cup bourbon
heat all 3 until brown sugar dissolves
boil 1-2 packs of hot dogs
slice hot dogs into small pieces and add to mixture.
leave on med heat until hot dogs are gone. :-)
(add brown sugar, ketchup or bourbon according to taste)
This is GREAT for tailgating or just a quick appetizer/snack.
