Side Dish ideas?

I have garlic-chili rubbed tilapia in the fridge. I'd like for there to be a starch + green veggie somewhere in the mix. I have some brown rice on hand, as well as some pasta but regardless I'll have to make a quick trip out for a veggie  so I'm open to any ideas.

- Spicy Sweet Potato fries (sprinkle them with ancho chili powder and garlic salt) - For some reason I always like steamed broccoli with fish too... makes me feel healthy - Combine your veggie/starch and make vegetarian stuffed peppers - Orzo or rice with roasted red peppers and peas

The stuffed peppers sound good, do you have a recipe you've used before?

I love couscous and asparagus when I have fish.

I've made these southwestern stuffed peppers before but I've never made vegetarian ones but you could easily adapt it.

The stuffed peppers looked so good, easy and inexpensive, I made them last night. Sadly, though, I used the can of Rotel I had on hand (I had most of the ingredients already) and it was Hot. I usually use Mild. The peppers were good (DH loved them) but a little too hot for me. I need to make them again soon with a mild can so I can eat more than 1 pepper!
