Made a killer homemade chicken and tortellini soup!

I made this killer chicken tortellini soup tonight. I am not a huge fan of soup but I've gotten to where I love homemade soups. LOVE IT! :) My hubby made a homemade beef soup/stew on Monday. We are just cooking fools these days! :)

     I have been watching Rachael Ray lately so maybe I will get inspired lol

    Homemade chicken and tortellini soup

    chicken, carrot (peeled and sliced), onion (cut into big chunks), 2 stems of celery (chunked), water, salt, bay leaf

    put chicken in pot with enough water to cover it, place in carrot, onion, and celery as well as salt to taste and one to two bay leaves

    boil until chicken is cooked

    remove chicken and allow to cool enough to cut up, strain broth, removing veggies

    put chicken back in broth with another carrot peeled and sliced (you can add other things at this point if you like), bring back to a boil, add tortellini and cook until directions on tortellini say should be done (for me it was 10 minutes)

    serve with grated parmesean cheese and warm bread :)

     

    Believe me when I say this is just about the easiest soup you can possibly make!

  • Sent some to mom, who came up with the original recipe, and she loved it more than the one she made. I want to spice it up a bit next time...some sweet basil or other Italian spices perhaps. My hubby thinks I should leave it as it but I want to see if I can do it one better. Tell me what you think when you try it.
  • Too funny, I made Tortellini soup last night as well. No chicken, but still Yum, Yum, Yum!
