Baking

I have to make some goodies for work for Friday. I was hoping to not have to run to the grocery store mid-week, but it looks like I might have to. I was looking around the kitchen and I don't have much in terms of baking! They already have lots of cookies coming, so I don't want to do that. I was thinking about making cheesecake in cupcake pans (I have some graham crackers in the house... so that's a start).

 

Where do you get your inspiration when you "whip something up"?

  • I have a few staple things I make, cheesecake cupcakes are one of them.  I either use cookies for the base, or bake some brownies in the bottom of the cups, then too with the cheesecake stuff.
  • I never knew we had a Quad City board!!

    Here is a recipe I have used a few times.  It is a Nutella Cheesecake. It is not my recipe.  I did get it off the web.   I make it into cupcakes.  I hope that helps. 

    Ingredients

    1. In a bowl, beat cream cheese& sugar with electric mixer for 2 minutes until light and fluffy.
    2. In a separate bowl, whisk the 1/2 cup heavy cream with the Nutella, leaving no lumps.
    3. Whip the remaining heavy cream until soft peaks form.
    4. Divide the cream in half, folding half into cream cheese mixture and half into the Nutella mixture.
    5. Alternately spoon the 2 batters into the pie crust, creating layers.
    6. Refrigerate for at least 1 hour and serve!

    ----To Warm Nutella----.

    1. In microwave, heat on high for 5 seconds in microwavable bowl. Or, on low heat on a stove until mixture becomes creamy.

    2. To help the heavy cream whip faster, freeze the bowl and beaters for 5-10 minutes before adding the liquid.

    Holy moly, is it good!  It's also really easy to make.  It's called 'The best chocolate sheet cake. Ever.' and the name fits.
