I have a few people staying at my house for a week. They have helped with the cooking and clean which is great... but I didn't realize how green I was until they arrived. I have been using dish towles for cleaning and "cloth napkins" and rarely use paper towels. To the point where I don't remember the last time I used a paper towel. My guest however use a bunch. I will have to replace my roll this week if not twice I am sure. They also leave all sorts of lights on! Its driving me crazy. I didn't realize how aware I was of the enviroment until this weekend.
Re: non-green guest
This happens to me often with guests. Usually it is the recycle bin that they neglect. I know they just are not used to how we live, but hopefully I inspire them a little in that aspect:)
What are they doing with the paper towels that they are using so many? I'd probably have hid them by now if I didn't want people using them.

The same thing happens at our house. The last person we had over for dinner looked at the cloth napkins on the table and commented "oh wow, fancy!". No, we just don't use paper. He seriously thought that we were nuts.
I think part of it is also the area that we live in. If this was the pacific northwest, the "green" things we do would be so much easier. Here, we are the only house on our block that has the city pick up our recycling weekly, even though it is available to everyone.
Hide the papertowels, and don't give them an option other than cloth. Maybe they will like the idea and start it at their house!
My house, my rules. I'd show them how we do things and tell them we try to save energy by turning off the lights we're not using. I'd ask them to respect our way of living.
If they forgot once I wouldn't make a fuss, as long as I felt they were trying to respect us. I'd definitely hide the paper towels.

and worst of all, they think we're snobs!
I was just going to say this! I would hide the paper towels and try to explain the cloth ones. Show them how super awesome they are... maybe you'll convert them!
