Is there any suggestions for what would be a good simple herb garden to grow inside during winter and outside during summer? I would love to have a few fresh herbs but I don't know what's easy to grow and take care of when you only have the ability to dig a hole and then drop seeds or bulbs in:P.

Not much direct light no. The windows aren't set well for direct light it's a little shadier most of the day.
Then I would say chives & maybe parsley. Stuff like basil, rosemary, thyme, sage, etc. need a fair amount of light. You could certainly grow all of the above outside (assuming you have enough light) & then just let them die when it gets too cold
