I had some homemade (down to the tortillas) chicken enchiladas and rice. It was tasty.

Homemade ceviche- shrimp, avocado, tomato, red onion, cucumer, serrano chile, cilantro, lemon, lime juice. YUM.
2 baked chicken taquitos.
It was like Cinco de Mayo over here!
Tomato, basil mozzarella salad with vinaigrette and a small side of my favorite snack.
(steamed lentils mixed bruchetta (sp?) and goat cheese) So fricken YUM
Ham and cheddar lean pocket and chocolate pudding. It was awesome.

Minestrone soup, spelt crackers, handful of trail mix, babybel cheese and water.

I had a Lean Cuisine Mac N Cheese. Those are the grossest of the gross. I like alot of other LC's but the M n C is so sucky. Vom!
Also had a V8 and a string cheese.
Now I want chocolate.
