What is this lentil + cheese thing about?

Sounds interesting.

I will share my dish of the moment too - black bean quesadillas.  Tortilla, sprinkle cheese, sprinkle canned black beans, microwave, and eat with Pace salsa.  If I had greek plain yogurt I'd use that too.

YUM, quick, and cheap.  I'll be eating a lot of these while H is gone starting tomorrow.

  • It's Fitty's fault. She posted on FB about it and I didn't want much for lunch today so I tried it out. SO GOOD!

    All from TJs - steamed lentils, feta or goat cheese and tomato bruschetta. Grab a spoon and dig in. I couldn't find the tomato stuff, but it was still good.

  • I always have lentils hanging around, this sounds YUM!

    So does your black bean quesadilla D! 

    I like having new things to make for lunch, I'm sick of all the PB&J I've been eating lately.

    These two recipes have been hits at our house:

    Red Beans & Rice and Vegetarian Chili (I skip the butternut squash though)

    They're both high fiber, low fat, veg friendly and make 4-6 servings that keep pretty well -- perfect for lunch leftovers.

  • They were kind of where the rice and beans are located. They are in a pouch that states that they're fully cooked - just use a microwave or a pot of boiling water to warm them up.

    At my TJ's they are in a package in the refrigerated produce section, near the pre-cut bags of veggies and big bags of salad mixes.

  • Gals they're in the SALAD section. Under Steamed lentils.. next to their beets and stuff. NO boiling no nothing!

    Just out of the bag and spoon! 

     Use their bruchetta sauce and some feta or goat cheese crumbles.. OH EM GEE.. ::mouth watering:::

  • Oh yes I LOVE that stuff!  I  made a salad that is fitting for a pot luck or party, or even to make a big batch and eat over the course of a week.  Healthy too:

  • I made CBB's lentil soup for dinner last night and it was major yum. even H liked it and he hated my first attempt with lentils.

    CBB's Lentil Soup (all ingredients from TJs):
    - 1 package chicken sausage
    - 2 packages steamed lentils
    - 1 box of low-sodium chicken broth
    - 1 bag baby spinach

    1. Slice the sausage into bite size pieces. Brown them in a big pot over med-high heat with a little EVOO.

    2. Add the lentils (do not drain or rinse) and the chicken broth. Bring to a simmer. Turn the heat down slightly. Add the spinach on top of the soup, cover with a lid and simmer for 10 minutes.

    3. Return to the pot. Stir in spinach. Add 2 Tbsp. lemon juice. Add salt & pepper to taste.

    I also added a bit of cayenne pepper and drizzled my bowl w/ hot sauce for a bit more kick.
